Tease-y Tuesdays: Confetti Cake Mix Cookies

When it comes to baking divine and looking fine, it doesn't all have to be such a chore! We'd like to introduce you to Tease-y Tuesdays, where we'll post recipes designed to be whipped up in a snap. Recipes for when you'd rather be tied up by something other than baking all day!

First up, a classic in my book- Confetti Cake Mix Cookies.

They're easy, versatile and fast (kinda like me ;) ). I think they are a winner with all ages as well.

Makes about a dozen and a half (18) cookies

Foreplay: Collect your toys- electric stand mixer, or hand mixer with a large bowl, measuring cup for liquids, cookie scoop (1.5 tbsp), baking sheets, cooling rack plastic wrap & parchment paper. Then, collect your ingredients:

  • 1 (15.25 oz) box of vanilla cake mix

  • 2 large eggs

  • 1/3 cup vegetable oil

  • 1/2 cup of rainbow sprinkles, or 1/2 a cup of ANY of your favorite colored sprinkles, as long as they are that oval/tube shape

  • 1/2 cup of white chocolate chips (optional, and if you can't have a cookie without a chip)

Main Event:

  1. Preheat your oven- turn the heat up to 375 degrees F!

  2. Combine the eggs, oil and cake mix well. It's hard to over mix with cake mix cookies, but be mindful.

  3. Fold in the sprinkles and (optional) white chocolate chips.

  4. Cover your mixture and refrigerate for 30 minutes- the mix can be sticky and this helps to reduce the stickiness a bit and makes for a better cookie on the other end.

  5. Remove the dough from the fridge and scoop out cookies that are about 1 and a half tablespoons. Roll them into balls and place them on your baking sheet about an inch apart.


  1. Bake for 4.5 to 5 minutes, then turn your baking sheets and bake for another 4.5 to 5 minutes. If your oven runs hot, reduce to 4 minutes and 4 minutes. In total, bake your cookies no more than 8 to 10 minutes. over baking these cookies is easy and they will be quite dry if you do.

  2. Let cook on the baking sheet for 5-10 minutes after the cookies are removed and transfer them to a cooling rack.


  • Enjoy! These are also great with a little buttercream frosting, or dipped in melted white chocolate and garnished with sprinkles.
