Squeeze Me Bars

Sometimes we all need a little squeeze to complete our day. Try our Squeeze Me Bars to put a little pep in your step.

Prep Time: 15 minutes

Cook Time: 55 minutes

Servings: 12

  1. Foreplay: Preheat oven to 325° and spray your 8 x 8 pan heavily.

  2. Main Event: Start with your shortbread- hand blend butter, flour, and sugar together until you have course crumbs. Spread your mixture across the bottom of the baking sheet and press to firm before placing in the oven for 25 minutes. While your shorty firms up, mix remaining sugar, remaining flour, baking powder, salt, eggs, meyer lemon juice, and zest together.

  3. Climax: Take your shorty out and pour lemon mixture over the top. Place pan back in the over for a second ride for an additional 25 minutes.

  4. Cuming Out: If you're us, you can't wait for them to cool to put them in your mouth. However, we suggest you let them cool and then dust with powdered sugar.


  • 1 C 2 Tbsp. + 1 tsp flour (all-purpose, split 1 C in shortbread, 2 Tbsp +1 tsp filling)

  • 1/2 C unsalted butter (room temperature)

  • 1 1/4 C sugar (split 1/4 in shortbread, 1 C in filling)

  • 1/2 tsp baking powder

  • pinch of kosher salt

  • 2 large eggs

  • 3 tsp lemon zest (can switch out for lime or orange)

  • 3 Tbsp meyer lemon juice (can switch out for lime, orange or common lemon)

  • 2 Tbsp powdered sugar (optional)
