Happy New Year! We could all use a little luck as we start 2022.
Prep Time: 2 hours
Cook Time: 55 minutes
Servings: 6-8 people
Foreplay: Rise and prepare your black-eyed peas to soak. Place in a bowl and cover with 4 inches of water and cover for 2 - 3 hours.
Main Event: Saute chopped bacon in a large saute pan until crispy. Then, add your sausage and brown for 3 minutes. Place the mixture to the side to rest. Place celery, garlic, jalapenos, onions, thyme, and bay leaf into the saute pan to cook until onions are golden. Next, add chicken broth, creole seasoning, and black-eyed peas (after draining) to the pan and bring to a boil. Reduce the heat and cook for 20 minutes.
Climax: Add collard greens (or mustard greens are also good) and meat to the pan. Cook for an additional 10 minutes.
Cuming Out: Dish out and enjoy the new year.
Ingredients:
1 lb black-eyed peas (dry)
5-6 sliced bacon (thick)
1 C smoked sausage (I like to use the whole sausage)
1 onion
2 stocks celery
3 cloves garlic
1 jalapeno (add additional peppers if you like- 3 small spicy red)
4 sprigs of fresh thyme
bay leaf
2 tsp creole seasoning
8 C chicken broth
2 C collard greens (or mustard greens)
